Cheesy Asparagus Biscuits

Quick & Easy Asparagus with Eggs & Mustard Sauce

The entire point of this delicious recipe is to make it an incredibly fast and simple recipe to prepare.  Thus, the  proportions for this recipe are flexible, and to your taste.

Ingredients (Serves 2):

1 lb Asparagus (approx: 1/2 lb per person)

1-2 T Oil (or butter)

Salt & Pepper (to taste)

Eggs (1-2 per person)

3T Grey Poupon mustard (or whatever mustard is your favorite)

2T mayonnaise or sour cream

1tsp lemon juice

Paprika or hot sauce (or both) to taste

Instructions:

Preheat oven to 425 degrees

Cook asparagus in preferred style (we drizzle the asparagus with oil, sprinkle with salt & pepper and roast it in the oven at 425 until it is bright green and tender–about 10-15 minutes)

Mix mustard, mayonnaise/sour cream, lemon juice and spices

Cook eggs–we prefer over easy, although poaching is also delicious.

Put asparagus servings on plates

Place egg on top of asparagus

Drizzle with mustard sauce

Serve!

Variations–

Cheesy Easy Asparagus Eggs: add parmesan or other favorite cheese to asparagus before roasting.

Spicy Easy Asparagus Eggs: use other spices (Old Bay, Cajun, Montreal spice) on asparagus before roasting

Cheesy Asparagus Biscuits

These soft, cheesy, slightly peppery biscuits are a real treat.  I wouldn’t suggest eating these warm.  Their texture is ideal when they are cooled.

Prep time: 20 minutes.  Bake time 15-20 minutes.  Total time: 40 minutes Yield: 12-15 scones, depending on size.

Ingredients:

2 cups flour

1T sugar

1T baking powder

1/2 tsp salt

4T butter (grated)

1/2 tsp cayenne powder

1/2 tsp black pepper

1C grated cheese (something sharp/flavorful and hard is ideal)

3/4 lb Asparagus, steamed and chopped

Instructions:

Step 1: Preheat oven to 425

Step 2: Steam asparagus, and let cool.  Chop.  Reserve tips for garnish, if desired.

Step 3: Mix flour, sugar, baking powder, salt, cayenne, black pepper.

Step 4: Stir butter into flour mixture until it has the texture of coarse meal

Step 5: Mix in cheese

Step 6: Fold in asparagus

Step 7: Pat into a square, and cut into approximately 2″ square biscuits.

Step 8: Put onto greased baking sheet

Step 9: Bake for about 15 minutes (or until golden brown and a pick inserted comes out clean.)
